Description
Vegan Honey is derived from the sap of the Lontar palm (Borassus flabellifer), which prefers dry and arid regions of Indonesia. We source ours from three different islands: Bali (Buleleng), Madura (Sumenep) and Rote.
The sap is tapped from the branch from which the lontar flowers blossom, then left to drip into hollow bamboo containers. Mangosteen juice and other botanical antibacterials are used to prevent the sap from fermenting.
The hollow Bamboos with the sap are colected twice a day – once in the morning and once in the afternoon. Farmers climb the 15-25m tall palms each time.Each farmer on average climbs 15-20 Lontar palms per day. It is then slow boiled over traditional terracotta stoves, under constant supervision, for a while…
… and a while longer until condensed.
And Voila’ Vegan Honey is born!
