Brown sugar is the common name given to unrefined cane sugar. While the 1990s saw the rise in popularity for unrefined sugars in developed nations, granulated and unrefined cane sugar is not as common in Indonesia. This variety, harvested from the sap of the green sugar cane, is going to already be familiar to many western palates.
This sugar is naturally handmade in East Java, using traditional techniques. East Java is the central sugar-producing region of Indonesia. While the majority of sugarcane comes from large monocrop plantations, the raw materials for this sugar are instead collected from smallholder farmers and family gardens.
